Strawberry Summer Cake

Hello Friends,

I’m excited to report that I’m back in the blogging game!  This post is being typed up via my new MacBook Air that I purchased yesterday!!  And if you are reading this post, that means I know how to work it. 😉 Phew!

Now that I have a laptop, I plan to keep my readers abreast on my new recipe discoveries.  In addition to spending $$$ this weekend, I also managed to walk to the beach all 3 days.  Each day, more people joined me, so that was reassuring.  My roommate, Ryan, and I had also planned to BBQ on Labor Day so I woke up early yesterday morning to spend some time with food.  On the menu was turkey burgers w/homemade pesto and strawberry summer cake for dessert.  No pics of the turkey patties, but I do have a recipe and pictures of the cake!  A friend gave me the recipe many days ago and it’s tasty!  The cake actually calls for rhubarb rather than strawberry, but they both are delish.  This was a good dessert to end the summer with.

Strawberry Summer Cake

1 Yellow Box Cake Mix (plus ingredients on back of box)

1 box sugar free vanilla pudding mix

1 cup heavy cream

1 cup sugar

2-4 cups sliced rhubarb or strawberries (or other berry)

Directions: Preheat oven to 350 degrees.  In a large bowl, follow directions on box for the cake mix.  Add an extra egg and pudding mix.  Stir with whisk.  In a separate bowl, combine cream and sugar.  Wash and slice fruit, set aside.  Grease a 9×13 baking dish.  Pour cake batter into dish and spread evenly (it will be thick).  Next layer on the fruit.  Finally, pour the cream/sugar mixture evenly over the top.

Pop ‘er in the oven for 40-60 minutes or until the middle is not jiggly anymore (mine took 45 minutes).  It will start to turn golden brown along the edges but it’s very moist in the middle.

I’m thinking an alternative name for this cake could be uno leche cake!  It’s so moist because of the cream and pudding additions.  Not to mention, it’s so simple!
